It has been forever since I posted a recipe. Here is one I make periodically that is absolutely delicious - and oh so easy!
½ teaspoon salt
2 eggs, slightly beaten
1 Cup Milk
1 Tablespoon sugar
Combine flour, salt, sugar. Mix together in a bowl and make a hole in center and add the milk and eggs and mix well.
Heat 1 Tablespoon of oil in skillet or crepe pan *** or just spray some PAM***
Make sure oil is hot before adding crepe mixture. Pour in enough batter to cover the bottom of the skillet in a very thin layer. Cook until it seems set and the edges are a little dry. Turn over and cook other side.
My favorite toppings: Jarlsberg cheese and mushrooms cooked w/Herbs de Provence seasonings
or for dessert: melt butter on top and sprinkle on some cinnamon and sugar – another variety I haven’t tried yet: melt some Nutella – add strawberries and drizzle chocolate and a dollop of whipped cream on top!
